"Bacon Linguini Carbonara"

Ingredients:
  • 250 grams linguini pasta
  • 2 eggs
  • a good pinch of salt
  • 1 bar (225 grams) cheddar cheese, grated
  • 3-4 tbsps evaporated milk or cream, or combination of
  • 1/4 tsp ground white pepper
  • a dash each of ground oregano and ground nutmeg
  • a tbsp of light olive oil
  • a clove of finely minced garlic
  • 200 grams of honeycured bacon, snipped
  • 2 tbsps of butter
  • 1/2 cup of hot pasta water (the water you cooked the pasta)
  • dried oregano leaves, for topping

Procedure:

Cook linguini as directed in the package. Meanwhile, in a large bowl, break the eggs. Add salt. Beat lightly. Put the next-five ingredients. Mix well. Set aside.

In a large pan or wok, over medium-high fire. Heat moderately. Add olive oil and bacon. Saute until lightly cooked. Follow with garlic. Saute until aromatic only not brown. Put the drained but still hot cooked pasta and butter. Toss until pasta is well-coated.

Add the egg-cheese mixture and hot pasta water. Immediately remove from fire (Follow this step so that the egg wouldn't curdle). Mix until thoroughly blended and sauce thickens. Put in a serving platter. Sprinkle some dried oregano leaves on top.

Good for 2-3 persons.

Hancock & Sunflower Seeds


Hancock is not the typical superhero story that's action packed. It's more about the character and his life with superhuman powers. Though, it had poor to average reviews. I kinda like the story because there's a twist that is different from the superhero movies I've watched before. Maybe it will have a sequel. The effects of the movie are great. Like always, Will Smith who plays John Hancock, is a hunk and co-star Charlize Theron who is one of my favorite actresses, is a knock-out! If you want to read the plot of the movie, just click here. By the way, as we are watching... my two boys munched happily with this sunflower seeds you see in the photo above. They both love seeds and nuts, that we call "kutkutin". This is what Wikipedia says about this yummy sunflower seeds.

La.Pi.S #7 - Soup


Jollibee's La Paz Batchoy Soup & Tuna Pie

We were supposed to eat at Hap Chan Chinese Restaurant after Kulit's ballet lesson. The husband was craving for Chinese food, while, I wanted something hot. But unfortunately, the resto was closed due to air-conditioning trouble. The weather today was cold and windy that's why i wanted to have something to warm my tummy. We ended up at Jollibee, it's the only food store that's near the dance studio that serves hot soups. The photo above was my snack. The husband had the Junior Champ a.k.a TLC value meal and the Lil'One had chicken and rice. By the way, the La Paz Batchoy, which was a new product, was great for the cheap price of 28 Philippine pesos only. And of course, the Tuna pie was great too! One of my favorites at Jollibee, never fails to satisfy my palate (",)

Last Saturday, we went to SM-Mall Of Asia. Kulit, after 5 months of being absent at the rink, skated again with Tin & Bunso. While, the husband & I visited the Franchise Expo 2008 Exhibit at SMX. After that, we went for a snack at Krispy Kreme and avail their free wi-fi access.

Turon Triangles

I used the square wanton wrapper tucked in my refrigerator rather the traditional lumpia wrapper bought in wet supermarkets. I have some left-over when I did the recipe of "Fried Cheesedog Dumplings", click here for the recipe. And instead of putting strips of sweetened langka, which I didn't have. I add cheese as an alternative.

makes 24 pieces.

Ingredients:
  • 2 medium pcs of ripe plantain bananas (saging na saba)
  • 1/2 cup of grated quickmelt cheese
  • 1/4 cup of brown sugar
  • 24 pcs square wanton wrappers
  • 1 pc egg white
  • 2 cups of cooking oil for deep-frying

Procedure:

Slice into twelve each piece of banana. Lay a wanton wrapper on a flat surface. Brush all sides with egg white. Put a slice of banana at the center. Top with a teaspoon of grated cheese and half teaspoon of brown sugar. Form a triangle. Sealing all the sides. Do the same to the rest.

In a pan, over medium fire. Heat oil thoroughly but not smoking hot. Drop carefully each triangle. Do not overcrowd the pan. Cook until light brown. Turn to have an even browning. This would only take a few seconds. Drain in a colander.

Serve.

"Eggplant Salad Omelet"

Ingredients:
  • 1 tbsp sunflower oil
  • 1/3 cup eggplant salad (recipe here)
  • 1 tsp minced finger chili
  • 1 tbsp butter or margarine
  • 2 pcs eggs
  • salt and white pepper
  • 2 tbsps minced cheddar cheese
  • dried oregano leaves
Procedure:

In a small bowl, break the eggs. Add salt and white pepper. Beat. Set aside.

In a non-stick pan, put half of the oil. Add the eggplant salad. Cook over low heat for 5-6 minutes or until soft, stirring often. Put the finger chili. Cook for another minute. Remove from heat.

In another non-stick pan, over medium fire. Put the rest of the oil and butter. Heat lightly. Pour the beaten eggs. Place the cheese and a good pinch of dried oregano leaves on half of the omelet. Follow with cooked eggplant salad with chili. Flip the other half of the omelet over the mixture. Place in a plate. Sprinkle some more with dried oregano leaves.

Serve immediately and with bread.

Buto ng Kalabasa (Pumpkin Seeds)


Wikipedia defines pumpkin seeds as....

The hulled or semi-hulled seeds of pumpkins can be roasted and eaten as a snack, similar to the sunflower seed. Pumpkin seeds can be prepared for eating by first separating them from the orange pumpkin flesh, then coating them in a generally salty sauce (Worcestershire sauce, for example), after which the seeds are distributed upon a baking sheet, and then cooked in an oven at a relatively low temperature for a long period of time.

Pumpkin seeds are a good source of iron, zinc, essential fatty acids, potassium, and magnesium. Pumpkin seeds may also promote prostate health since components in pumpkin seed oil appears to interrupt the triggering of prostate cell multiplication by testosterone and DHT.[1] Removing the white hull of the pumpkin seed reveals an edible, green-colored seed inside that is commonly referred to as a pepita in North and South America.

"Nilagang Mani" (Boiled Peanuts)


A peanut is a common legume also known as a groundnut. It is eaten plain or roasted and sold in salted and unsalted varieties. It is used to make peanut butter and peanut oil.

You'll need:
  • about 2 kilos of freshly picked peanuts
  • water
  • 2-3 tbsps rock salt
  • 1/2 cup brown sugar


Here's how:

Wash the peanuts several times under running water until all the dirt is gone.

In a large thick bottom casserole, put the peanuts. Add the salt and brown sugar. Level with water. Mix. Cover. Bring to boil. Then, decrease fire to low. Simmer for 35-45 minutes, depending on your desire tenderness. I like it soft but still a little crunchy (",)
