Foodshot Sundays - Maty's Tapsihan
The husband been telling me since Friday that he wants to eat "Tapsilog" (Tapa-Sinangag-Itlog) at Maty's. It's located in Dongalo, Paranaque. Today, Tin is here. She's also a fanatic of that kind of food. So, off we went. Even my Lil'One loves their "Si-Log" ( fried garlic rice & sunny-side up egg). Me, I also like their "Tapsilog", besides it tastes good and cheap. It also makes me nostalgic about my childhood. The house we used to live in is still there and just 3 houses apart from the Tapsihan where we ate. But it has deteriorated so much that it lost her beauty. Anyways, it's good to be there again (",)

Kung Fu Panda
Turon Triangles
makes 24 pieces.
Ingredients:
- 2 medium pcs of ripe plantain bananas (saging na saba)
- 1/2 cup of grated quickmelt cheese
- 1/4 cup of brown sugar
- 24 pcs square wanton wrappers
- 1 pc egg white
- 2 cups of cooking oil for deep-frying
Procedure:
Slice into twelve each piece of banana. Lay a wanton wrapper on a flat surface. Brush all sides with egg white. Put a slice of banana at the center. Top with a teaspoon of grated cheese and half teaspoon of brown sugar. Form a triangle. Sealing all the sides. Do the same to the rest.
In a pan, over medium fire. Heat oil thoroughly but not smoking hot. Drop carefully each triangle. Do not overcrowd the pan. Cook until light brown. Turn to have an even browning. This would only take a few seconds. Drain in a colander.
Serve.

My Happy Fried Rice
Ingredients:
- 1/4 cup of cooking oil
- 2 pcs eggs
- 2 pcs jumbo hot dog, cut lengthwise & sliced diagonally
- 2 heaping cups of cooked rice, mash to separate grains
- a good pinch of fine salt
- 1/2 tsp iodized coarse salt
- 1/2 tsp garlic powder, add more if you want
- a teaspoon of liquid seasoning
Procedure:
In a wok, over medium-high fire, heat moderately. Put 1/3 of oil. Break the eggs over the pan. Add a good pinch of fine salt. Stir the eggs. Cook until half-done only. Put on top of the mashed rice.
Put the rest of the cooking oil in the pan. Fry for 20 seconds the hotdogs. Dump all the rest of the ingredients in the pan. Mix until well-blended. Cover. Stirring often. Cook until rice is fluffy.
Serve hot.

I wake up at 7am. Take a pee. Wash my face. Gurgle. Check my blood sugar. a shot of insulin. Have a light breakfast. Do some household chores. Sometimes blog like today :) Cook breakfast for my two boys. Prepare my kiddo for school. Bath time. Eat brunch. Accompany my child to school.

Neither. I would'nt change my past or attempt to know my future. I love life can offer me right now, may it be bad or good. I know I will learn from it and for that, it will make me a stronger and wiser person. Makes me appreciate everything in life!
Salted Fish Yang Chow
- 5 pcs dried salted herring (tuyo), lightly fried & flaked
- 2 pcs eggs, beaten
- 2 tbsps & 3 tbsps cooking oil
- 6 cloves garlic, finely pounded
- 3 small pcs (100 grams) red ripe tomatoes, finely minced
- 4 slices of sweet ham, coarsely chopped
- 6 cups cooked white rice, mashed to separate grains
- 1 sachet (8 grams) all-in-one seasoning granules
- 1/4 tsp ground white pepper
- 1/2 tbsp liquid savor
- a good sprinkle of iodized coarse salt
- 2 tbsps of finely minced carrot (optional)
- a handful of minced spring onion
Procedure:
In a large wok, place over medium-high fire, heat thoroughly. Put 2 tbsps of oil. Pour the beaten eggs. Let it cook until half-done (the top of the egg should still be shaky and wet). Slide it into a plate. Set aside.
In the same pan, pour the rest of the oil. Add garlic. saute until rich golden brown. Follow with tomatoes. Cook until limp. Put the flaked tuyo and ham. Stir-fry for 15-20 seconds. Dump the rice. Add the next-five ingredients and put back the eggs. Mix. Make sure to shred the eggs. Cover. Stirring often. Cook until rice is fluffy.
Remove from heat. Sprinkle spring onion on top. Serve hot. If you want, top it with sunny-side up egg.

Priceless!
Hayyy! Usually, by ths time the water supply is fine until 11 pm. It's really hard to cook and clean afterwards the kitchen if your water is limited. Got so irritated. The husband even told me not to cook anymore and just have our food delivered. But I didn't feel like it. I just continue what I had started. While doing so, our Lil'one asked me, "Ma, are you okay?" (Ma, ok ka lang?). I said, "No, I'm not okay." and asked him why? He told me, "I thought your mad at me because your angry." I told him, "I'm not mad at you. Why would I be mad at you? It's just that, I'm so irritated that there's no water again!" He just gave a big hug and kissed me on the cheek. sweet, isn't he? My kiddo maybe makulit but he's also very sweet and affectionate. In an instant he can make me smile, takes away my being irritated. This is one of the good things of being a mom.... priceless!

Foodshot Sundays - "Binalot-style Binagoongan"
My first time to join. I saw this meme from my sis-in law's blog, Clark & Butchay's Blog. Thanks. For my entry, I'd like to share this photo, my own version of "Binalot-style Binagoongan". Here is the recipe, as well...
Ingredients:
- 2 tbsps cooking oil
- 3 big cloves of finely minced garlic
- 1 medium (35 grams) of red onion, finely minced
- 1 medium (35 grams) red plump tomato, finely minced
- a slab (250 grams) of pork belly (liempo), cut at 1/2" cubes
- 1/4 tsp cracked peppercorns
- 1/2 tsp all-in-one seasoning or 1/2 tsp iodized coarse salt
- 3 tbsps (60 grams) raw shrimp paste (bagoong alamang)
- 1/2 cup water
- 3 pcs finger chilis (sili na pang-sigang)
- a heaping teaspoon of light brown sugar
- 1 pc (100 grams) eggplant, cut into four & quartered
- In a pan or wok, place over medium-high fire. Heat thoroughly but not smoking hot. Add oil and garlic. Saute until garlic is rich golden brown. Follow with onion and tomato. Cook until soft.
- Put pork, cracked peppercorns and all-in-one seasoning. Stir-fry for 2 minutes. Add in the bagoong. Saute until aromatic, about a minute or two.
- Pour water. Mix. Cover. Bring to boil. Then, lower fire, gently bubble away for 15 minutes. Mix. Lid back on. Cook for another 15 minutes.
- Increase fire to medium, put the chilis, brown sugar and eggplant. Mix until blended. Cover. Cook for 3-4 minutes or until eggplant is done but not overcook.
- Serve with steaming rice, salted egg, slices of tomato and garlic-vinegar dip.
Weekend Snapshot - Goofing With The Camera
Yesterday, we experienced a typhoon, named Frank. It got heavy rains and strong winds. It flooded our street and our backyard. Hubby and I, we goofed around with the camera because there's nothing else to do! There's no electricity, early in the morning until the afternoon. We can't use the tv or blog! (",) In the photo above, Hubby is holding a little froggy. A half an inch frog... that's how small it is!!!

Because of the bad weather, I got up late this morning, around 10 am. Not for the reason that lying in bed is good right now. But for the fact that I can't sleep straight. The strong winds been blowing so hard, making our Mango tree sway over our roof, making a screeching sound!
The husband asked if we could have Jollibee breakfast meals delivered. I said, yes without any hesitation. I did not feel like slaving myself in the kitchen and for the fact, that my tummy is growling, meaning I'm hungry. It's way past my breakfast time which is around 7 am after my insulin shot.
Breakfast meals in Jollibee is one of my family's favorite, The husband loves the Longganisa Meal, that's way before when he was still my boyfriend up until now. The Lil'One learned to love their pancakes. While, I love their tapa and longganisa too! Even our dear Luigi loves the garlic fried rice. I even left him some of my tapa to enjoy with garlic fried rice.
Storm Frank
Since yesterday, it was gloomy because of the heavy rains storm Frank been giving us. When I got up this morning. I saw our street been flooded with rain water, until now as I'm typing this (buti na lang sa labas lang ng bahay hindi sa loob!). Even our backyard been like that too. Plus the fact, that as early as 4 am this morning the electricity died on us. Fortunately, after several hours it came back, at around 1 pm. A great relief for me! I thought it will be gone again for a long time. Like what happened when storm Milenyo hits Manila two years ago. We did not had electricity, for 7 straight days! What a week of discomfort!.... and a very traumatic experience!
According to the husband, who's always updated about the current news. The weather here in Manila will be like this for several days, about a week. Nyaaayy! The good thing about storm Frank is, it's not humid and hot anymore. But I bet, after several days of rain water in flooded areas, lots of mosquitoes will be lurking around again! tsk, tsk, tsk!

"Breaded Pork Fillet"
- 600 grams pork shoulder
- 1 tsp all-in-one seasoning
- 1/2 tsp garlic powder
- 1/4 fine salt
- 3/4 tsp ground black pepper
- 1/2 tbsp liquid seasoning
- about 2 cups of cooking oil
- 3/4 cup all-purpose flour
- 2 tbsps cornstarch
- 1/4 tsp paprika
Procedure:
Wash and clean the pork. Pat-dry. Remove the skin. Slice thinly into long large straps. Put in a large bowl. Put the next-five ingredients. Mix thoroughly. Stand aside for several minutes.
Meanwhile, in a pan or wok, heat oil over medium-high fire until smoking hot. While waiting, put the ingredients for the seasoned breadcrumbs in a clean paper bag or large plastic. Mix.
Put the marinated pork fillet into the paper bag. Add in some air. Seal. Shake gently until pork is well-coated with seasoned breading.
Gently stretch the pork fillet into long straps before putting it into the hot oil. Make sure not to over crowd the pan. Do this in batches until done. Drain in lots of paper towels.
Serve with steaming rice and catsup. You can also partner this recipe with any sauteed veggies.

Our boat trip going to Coco Beach Island Resort, Puerto Galera, Oriental Mindoro, Phils. last summer. Actually, I was taking a photo of my kiddo while he was enjoying the ride. But the trip was too bumpy because of the big waves. I can't keep my hand steady. Anyways, the picture was great! I got it while the water is splashing. Perfect for this week's theme!

Friday Is Noodle Day For My Lil'One
After we got home from school, I immediately went to the kitchen, washed my hands and cooked 2 packs of instant pancit canton for his merienda. As he was putting his school bag in its proper place, changing his clothes and putting his school lunch box to the sink. You can see the eyes of my kiddo twinkling with glee! That's how much he loves noodles specially this one! The commercial of this product is true.... anti-sumpong.... anti-lowbat (",)
In the photo, my Lil'One is showing off his favorite Pancit'on (that's what he calls it!), in his two favorite flavors, "Kalamansi" (green package) and the "Sweet-Spicy" (orange package).

Free Meal
The husband wanted to claim the freebies at Chowking. One of the benefits of being BPI credit card holders. We had our late breakfast there, just before getting our Lil'one in school. Hubby and I had their beef chao fan with regular coke and petite size halo-halo. A nice meal, indeed!
