"Double Oyster Stir-fry"

Ingredients:
  • 2 tbsps corn oil or vegetable oil
  • 3 cloves garlic, finely minced
  • 250 grams fresh oyster mushrooms, strips
  • 2 tbsps oyster sauce
  • 1/8 tsp ground black pepper
  • 1-2 stalks spring onion, minced (green part only)
  • a few drops of sesame oil

Procedure:

In a wok, heat moderately over medium fire. Put oil and garlic. Saute until aromatic only. Dump in the oyster mushrooms, oyster sauce and black pepper. Mix well. Cover. Cook for a minute or two.

Transfer in a platter. Sprinkle spring onion on top. Drizzle lightly with sesame oil. Serve hot.

"Giniling At Itlog Ng Pugo Ala Bistek"

Ingredients:
  • 450 grams lean ground pork
  • 1 tsp ground black pepper
  • 1/2 cup soy sauce
  • 8-10 pcs (100 grams) Philippine lemon (kalamansi)
  • 24 pcs quail eggs
  • water
  • salt
  • 1/4 cooking oil
  • 3 cloves garlic, finely crushed
  • 3 pcs (200-250 grams) whit onion, halved & thinly sliced
  • 1 pc (150 grams) potato, shoe-string cut

Procedure:

In a bowl, put the ground pork. Add the pepper and soy sauce. Squeeze the kalamansi, strain the seeds. Mix well. Set aside.

Place the quail eggs in a casserole. Level with water. Sprinkle heavily with salt. Place over medium fire. Bring to boil. Remove from fire. Let it sit until needed.

In a pan or wok, place over medium-high fire. Heat moderately. Put oil and garlic. Saute until light brown only. Follow with onion. Saute until translucent.

Add the marinated ground pork. Stir-fry for 2 minutes. Cover. Then, lower heat to medium. Bubble away for 10 minutes.

Meanwhile, change the water of the quail eggs until it is cool enough to handle. Shell the eggs.

Back to the pan, increase fire to medium-high, put the shelled eggs and potato. Mix well. Lid back on. Cook for another 4-5 minutes.

Serve with rice.

"Squash and Pork Saute"

Ingredients:
  • 1 slab (200-250 grams) pork belly, cubed
  • 1/4 tsp + 1 tsp iodized rock salt
  • 1/3 cup water
  • 2 tbsps cooking oil
  • 3 cloves garlic, finely pounded
  • 2 medium (75 grams) red onion, minced
  • 1 kilo squash, cut into 1"x1/2"x1/4" cubes
  • 1-1/4 cup rice wash or water
  • 1 pc pork cube
  • 3/4 tsp ground black pepper

Procedure:

In a wok or pan, put pork, 1/4 tsp salt and water. Bring over medium-high fire. Let it boil until liquid dries up. Stirring often. Put half of cooking oil. Stir-fry pork until light brown. Move pork to one side of pan. Add the rest of cooking oil. Put garlic. Saute until golden brown. Follow with onion. Saute until limp.

Add squash. Stir-fry for 2 minutes. Put rice wash, 1 tsp salt, pork cube and ground black pepper. Mix. Cover. Cook until squash is done. Stirring from time to time.

Best serve with fried fish and rice.

Weekend Snapshot - SAS-GSP Maiden Camp 2008



This was the first time that St. Andrew's School of Paranaque conducted a camping trip, from February 8-10, for their girl students. I was one of the camp staff again just like last week. Tin, my buddy, and I went to Mt. Makiling Saturday morning to follow them. We had the usual schedules and activities for the campers, like trekking, hiking, obstacle race, swimming and procession of stuff found in Mt. Makiling and paper-made long gowns, version of Santacruzan.

Though, tiring and I had only 2-1/2 hours of sleep during the Camp period. Indeed, a great experience for me. I even enjoyed the hike going to Ovaltine Arena. Also, I was assigned like the other teachers and staff, to a group of girls from different grade levels named "Patrol Carnation" to help them prepare the long gown for the Santacruzan.

Well, two down... one more to go. This coming February 23, there will be a camping trip again, for one day only. Definitely, I'm looking forward to it! (",)

A Sad Friday For My Kid

We've been at the rink almost everyday for the past 2-3 weeks. Getting ready for the qualifying exam so my kid will be able to join the Grand Pix Competition next month. Yesterday, February 8 was his schedule for that. To make the story short, my kiddo wasn't able to pass the test. His combination jumps didn't make it and weren't done properly (sablay baga!). I'm kind of sad too for him.... but that's that! There's always a next time. At least now, it's a lesson for my kid that he has to take seriously whatever his coach tells him. Always practice and not play at the rink.

That's not the sad part, failing the exam. The sad part is he doesn't like to skate anymore, even go to the rink. Maybe, he needs time to accept and process what happened. I'll just let him be.... hopefully everything will go back to normal. As of now, he just likes to play with his PSP.

"Saucy Chicken & Mushroom"

Ingredients:
  • 1 kilo chicken
  • 1 tbsp soy sauce
  • 1 tsp ground black pepper
  • 2 tbsps corn oil
  • 3 cloves garlic, finely crushed
  • 2 large onion, minced
  • 2 tbsps fish sauce
  • 1 can (net wt. 400 grams) whole button mushrooms, slice & reserve liquid
  • 1 pouch (115 grams) tomato sauce
  • 1 can (21 cl) or 1 cup unsweetened pineapple juice
  • 2 tsps packed brown sugar
  • 1 pc chicken cube
  • 1 bay leaf (optional)

Procedure:

Clean and wash chicken. Chop into 9 parts. Drain well. Put in a bowl. Add the soy sauce and half of the black pepper. Mix. Set aside.

In a pan, heat thouroughly. Put oil and garlic. Saute until light brown. Follow with onion. Saute until limp. Add the marinated chicken and fish sauce. Stir-fry until aromatic or until liquid dries.

Pour the mushroom liquid, tomato sauce and pineapple juice. Sprinkle the sugar and the rest of the black pepper. Add the chicken cube and bay leaf. Mix. Cover, Bring to boil. Then, decrease fire to low. Simmer for 30 minutes.

Increase fire to medium, add the sliced button mushrooms. Cook for 3-5 minutes or until desired thickness of sauce.

Serve with rice.

Weekend Snapshot - Our Very First Family Camping Trip




We had the Annual Camp of Boy Scouts of St. Andrew's School last Feb1-3 at BSP Jamboree Site, Mt. Makiling, Los Banos, Laguna. I'm one of the camp staff and also, my H. Our son came along too. Thursday Get Away At Villa Apolinario



Yesterday, my kiddo had no school classes. The school conducted a healing mass for their school staff and their families. We decided to go to Tagaytay to unwind rather than staying home. Before hitting the road, we had our breakfast in Jollibee, then took the bus going to Tagaytay. We visited Nanay Claring in her newly built house turned private resort, named "Villa Apolinario". We liked the place so much specially my kiddo. He had a great time swimming. He had the pool all by himself! While, I was busy taking pictures of the pretty flowers around the place. H (hubby) and I had a long chit-chat with Nanay Claring. She is such a sweet old lady. Fyi, this place can be rented. "Sinigang Na Sugpo Sa Kalamansi" (Prawns In Philippine Lemon Broth)

Ingredients:
  • 6 cups rice wash or water
  • 1 large (50 grams) red onion, quartered
  • 2 medium (75 grams) ripe red tomatoes, quartered
  • 6 pcs string beans (sitaw), cut at 2" length
  • 1 medium radish (labanos), sliced diagonally at 1/4" thick
  • 1/2 kilo prawns
  • 15 pcs (200-250 grams) Philippine lemon (kalamansi)
  • 2 pcs finger chilis
  • 2 tsps iodized coarse salt
  • half-bunch (150 grams) swamp cabbage (kangkong), tender stalks & leaves only

Procedure:

In a casserole, put the first-three ingredients. Cover. Bring to boil, then, lower fire and simmer for 8-10 minutes.

Increase fire to medium. Mash the tomatoes. Add the string beans and radish. Cover again. Cook for 3 minutes. Put the prawns, chilis and salt. Squeeze the Philippine lemon over the soup, straining the seeds. Mix. Lid on. Cook until prawns turn orange.

Put the swamp cabbage. Cook until done.

Serve hot.
