Penelope

Meet Penelope, my Nokia 6300. It's been a month now since I had her. I got her from Sun Cellular's Loyalty Program. This is my fifth year with the phone company as a post-paid line subscriber. I like her very much. She's very convenient to bring, lightweight, compact and easy to navigate. Also, she has a built-in 2 megapixel camera. A real beauty!

"Milky Noodle Soup"

Ingredients:
  • 2-3 tbsps cooking oil
  • 3 cloves garlic, finely minced
  • 2 medium red onion, halved & sliced thinly
  • 100 grams lean ground pork
  • 1/3 tsp cracked peppercorns
  • 1-1/2 to 2 tbsps fish sauce
  • 200 grams spaghetti noodles, cut at 2" length
  • 1/2 cup evaporated milk (add more if you want)
  • 2 tbsps carrot, finely minced
  • 100 grams cabbage, shredded

for the broth:
  • 4 pcs chicken leg quarters
  • 6-1/2 cups water
  • 1 tsp whole peppercorns
  • 1 medium red onion, quartered
  • 1 whole head garlic, skin on & pierced lightly
  • 2 pcs chicken cubes
  • 1 tsp iodized coarse salt

Procedure:

Put all the ingredients for the broth in a large casserole. Cover. Place over high-fire and bring to boil. Then, decrease fire to low and simmer for 40-45 minutes. Carefully remove the chicken leg quarters. Put in a colander. Set aside. Use the chicken for a different recipe. I used mine with the family's favorite fried chicken recipe, "Pritong Manok Ni Lola"

In a heavy-bottom casserole, place in a medium-high fire. Add the oil. Put garlic. Saute until golden brown. Follow with onion, cook until limp. Add the ground pork, cracked pepper corns and fish sauce. Saute until aromatic.

Pour in the strained broth. Cover. Bring to boil. Add the spaghetti noodles. Lid on. Cook for 8-10 minutes. Put the milk and vegetables. Cover. Bring to boil. Uncover and remove from fire immediately to avoid overcooking the veggies.

Serve immediately while hot.

I'm home alone today. Lil'One is in school and the husband is out for a trade & exhibit fair in SM-Megamall. I can use the laptop all for myself with no interruptions, hehe! I'm chatting now with my long lost friend, Ate Maeda. She's a family friend. It's been over a year since we saw each other. But you know as girls, as if time didn't passed by.... Weekend Snapshot - Fixing Stuff



That's Kuya Dheck, fixing stuff here in our house last Friday and Saturday , like changing the lights, door knobs, wirings and etc. The handyman of our barkada.

Pink Eye

After 3 weeks, it is finally gone. My little one suffered a pink eye, it is a food allergy that manifested in his eyes, the ophthalmologist said. The doctor gave me an anti-allergy ophthalmic solution that will be used strictly for 5 days, a drop for both eyes, twice a day. As the days passed the redness gradually disappeared. What a relief! As another school year starts tomorrow, I'm glad he is okay now. My kiddo got so conscious about his eyes, he's always always asking me when will the redness be gone. For now, as a precautionary measure as to not repeat the situation, he's not allowed to eat his favorite foods like fish, shrimps, crabs and other seafoods.

A farewell treat for the husband's cousin, that is Tita Andeng. A funny and sweet gal who goes ga-ga over pork siomai and chili sauce of Chowking. She just left tonight for Dubai. She'll be working there for 2 years. Good luck and have a safe trip. We already miss you!

Got a pretty and cute visitor last Saturday. It's my kiddo's very first grandchild, Hannah. She's also her cousin from his father. She came with her mom, Apeng and Tita Andeng. We had a blast having her here in our home, making her cry, teasing, playing and feeding her. Fyi, like his Ninong Kulit, they are both small but terrible, both has huge appetite and both very charming! I hope as promised by her Mom, she'll be back again for a visit.

"Choco-Banana Milkshake"

makes 3 glasses.

Ingredients:

  • 24 pcs ice cubes
  • 1/3 cup condensed milk
  • 3 medium pcs cavendish bananas (lakatan), peeled & sliced
  • 1/2 cup full-cream powdered milk
  • 1/2 cup instant chocolate powder
  • 1/3 cup ice cold water

Procedure:

Put all the ingredients accordingly in a blender. Process for a 3-5 seconds. Mix using a spatula until well-blended. Process again until smooth.

Serve at once.
